Who are we?

 

Our winery is located in the south of Austria (Styria, „Südsteiermark“) on the mountain called „Sausal“. It is run by the family, Karl, Eva and their three sons: Armin (18 years), Valentin (16 years) and Marwin (8 years). Karl has studied agricultural economics at the University of Natural Resources and Life Sciences in Vienna, Eva has studied business administration at the Vienna University of Economics and Business. The practical knowledge concerning winemaking we have gained from stays in Burgundy in 1997 and 1998. We cultivate 5 ha vineyards on steep hillsides with mainly red wine varieties. From the beginning on we have been working according to biodynamic principles and we have been certified according to demeter since 2003.

 

The „Schnabels“ have always been associated with the earth through winemaking and holding cattle. We realize that our daily doing and making results from our inside “programme” being a real farmer. Therefore we are not directed by contemporary trends but we are indebted to our earth, to the wine as an object of cultural value and to the consumer in terms of producing proper, free of residues and agreeable goods.

 

What makes us unique?

No sulfites are added to all of our wines.

No kind of preservatives, additives, fining agents and filtration are used in producing our wines (vegan wines).

Our wines develop without any chemical treatment and technical manipulation.

All wines develop and mature in small Burgundy oak-barrels (227 liters).

Our winery is a closed ecological circle due to our cattle (“Hinterwälder” or “Keltenrinder”), the use of wood pillars (acacia) in our vineyards etc.

Our vineyards are biotopes with herbal and animal diversity.

Working in the vineyards mainly by hand: e.g. no use of tractor to avoid soil consolidation in the vineyards, only use of a traditional scythe to cut the grass between the vines, manual subsoiling with a so called “Karsthaue”

Working in the cellar mainly by hand: e.g. open mash fermentation in vats with manual "pigeage", the mash is scooped by hand (no use of mash pumps)
